Today I woke up not feeling great (I felt like the dinner I had at a Mexican restaurant yesterday was a lump in my stomach), so I
laid in bed dozing and watching Golden Girls until 11am chilled before tackling a lot of this week’s class assignments. Around 3:30 it occurred to me that I hadn’t really eaten anything yet, and I should probably fix that. I’m trying to get myself back on track with my food habits (more about that later). My late lunch/early dinner consisted of a salad (pretty simple since my daughter hasn’t returned home from the grocery with the chicken breast), BUT it has two of my favorite things – these mini-cucumbers (seriously…they are the perfect size and I want to high five anyone who had a hand in growing them) and my favorite Cilantro Avocado yogurt dressing. A side of cottage cheese supplied the protein. Yum! What are you eating today??
